About Us

The restaurant

Casa Botín, founded in 1725, is the oldest restaurant in the world according to the Guinness Book of Records and one of the references of the best traditional cuisine in Madrid.

Forbes magazine ranked it third among the 10 best classic restaurants in the world for Casa Botín and its two specialties, the delicious suckling pig and lamb roasted in the Castilian style.

The restaurant consists of four floors, where efforts have been made to preserve the inn-like atmosphere, one of its main charms. Located in the heart of Madrid de los Austrias, Botín enjoys a privileged setting. Over the years, successive renovations and expansions have been carried out to accommodate the growing number of guests, always without altering the building’s characteristic appearance.
HISTORY AND EVOLUTION

The perfect suckling pig recipe

Three and four times a week shipments of the best Segovian suckling pigs and lambs from the magic triangle of this meat arrive at the restaurant:

Sepulveda - Aranda - Riaza

Little by little, slowly, lambs and suckling pigs turn golden under the heat and the steady, solemn breath of the old oven, fueled by holm oak wood. An oven that has remained in operation since its founding, under the watchful eye of master roasters and seasoned chefs who have dedicated their lives to this house.

When quality is tradition.

It is signature cuisine, yes, but signed by centuries of tradition, and that reverberates the essence of the best raw materials, respecting, as Gaudí maintained, that originality is to return to the origins. Menu
Although we strive to serve the best suckling pig or lamb at every table, other dishes are by no means overlooked. Guests can also enjoy a fine line-caught hake, fresh sole, *Almejas Botín*, Castilian soup, refreshing gazpacho, and many other delicacies, all accompanied by the finest wines.

A Century-Old Oven

The soul of Botín lies in its venerable wood-fired oven, burning since its very beginnings and fueled by sturdy holm oak wood. Under the watchful eye of master roasters, this oven has slowly roasted suckling pigs and lambs, infusing them with aromas and flavors that embody the essence of Castilian tradition.
Today, Botín remains the guardian of a culinary heritage that honors authenticity and excellence. Each dish served is a tribute to centuries of history, tradition, and passion for fine dining, offering guests an experience that goes beyond mere eating—becoming a sensory journey into Madrid’s past.
